Spotlight Recipe: Fish Tacos

Fish Tacos
Fish tacos are fresh, delicious and easy to prepare. Mix it up by using different kinds of firm fish such as halibut, mahi mahi or cod. Try soft corn tortillas instead of flour and experiment with different kinds of salsa. Green Mountain Gringo is one of my store-bought favorites, or you can make your own. A bright pineapple salsa or tangy salsa verde made with tomatillos would be a fabulous topper.

I tried these for lunch, because I needed a quick easy recipe. It was absolutely delicious with Mango Salsa and I hope you can post more recipes that have fish in them.

My friend was just telling me about this recipe. These tacos sound delicious! I can’t wait to try them! Great tips about the store bought or homemade salsa. They are two nice options depending on how busy you are.

That recipe sounds delicious! I love my fish tacos really simple, topped with Napa cabbage, a fresh squeeze of lime juice and chili yogurt(a mix of greek yogurt and sriracha chili sauce) Corona is optional, but recommended!
