Spotlight Recipe: Fried Rice with Edamame & Tofu

As Healthy Eats’ resident vegetarian, I’m always on the lookout for recipes that meet our nutritional guidelines and my (chosen) dietary restrictions. When I came across this fried rice recipe, I bookmarked it immediately. This dish cooks up fast, has added protein (thanks to the tofu and edamame) and was a great way to use up the leftover brown rice hanging out in my refrigerator. Next time, rather than canola oil, I’m going to try it with healthier rice bran oil.

Canola oil is not that healthy as it’s a by-product of a manufacturing process. Best to use olive or grapeseed, almond oil, etc. but the best health-wise is olive oil. Use regular, not virgin, for cooking, frying, baking, etc.

If that is the case, it should say something about the fruit juice it's self. They are not real fruit. How can something so natural be so bad for you? Think about that. I would try a Yoli Health Drink to be on the safe side.
