Spotlight Recipe: Roasted Peanuts


Kick off National Peanut Month (that’s March!) by roasting your own. This little nut is getting slammed lately because of a salmonella outbreak (that was caused by a manufacturer’s poor handling, not the food itself), but peanuts are packed with 30 nutrients, including protein and the antioxidant vitamin E. Nuts also contain heart-healthy fats — just stick to a small handful to keep those calories under control.

What great ideas to make use of stale bread. With many of us, once it’s a day old, it’s forgotten but you have brilliant ways to make use of it. The simplest thing I can do from your list is the breadcrumbs to baked chicken. At least, it is a way to save.
