Homemade Mother’s Day Menu

Frittata
When I was a kid, my siblings and I used to bring mom breakfast in bed every Mother’s Day. Most years it was a bowl of cereal and a glass of juice — but hey, it was the thought that counts (plus, we weren’t allowed near the stove). These days, I prep my mom a homemade brunch filled with love, thoughtfulness and, of course, yummy food. Plus, it’s much cheaper to cook at home when you’re celebrating with a family of 16!

In that spirit, here is our homemade Mother’s Day menu you might want to try.

Start Smooth
Wake mom up with a refreshing vitamin C-packed smoothie. Bananas add potassium, which helps your muscles — especially the heart. A good tip: use frozen strawberries to get a frothier texture.

The Perfect Main
Mom deserves nothing but the best on her special day, right? Eggs are considered a perfect protein since they contain all the needed amino acids, the building blocks of protein. This beautiful frittata is dressed with goat cheese, red peppers and scallions. With fewer than 2 eggs per serving, it’s a portion that mom can enjoy worry-free.

On the Side
Complement the frittata with a simple Mediterranean-style chopped salad. The extra-virgin olive oil and olives contain loads of vitamin E, an antioxidant tied to anti-aging benefits (what mom wouldn’t love that?).

Serve Up Some Love
If mom’s not an egg person, consider pancakes instead. These whole-wheat, heart-shaped pancakes are drizzled with a freshly made strawberry sauce (red is the color of love!). Get the kids involved in prepping, too — they’ll love the fun shapes.

The cookies supress your appetite.. Much like diet pills but w/o the harmful side effects. I get to eat almost 3/4 lbs of chicken, turky or fish and a cup of green veggies/night for dinner. That is 500 calories. Put that on your plate and try to eat it! it is a TON of food. My husband is 6' 250 lbs and he has a hard time finishing it. Plus.. you're cutting out all the crap that people eat on a daily basis like soda, chips, fries.. it's a good way to get you to pay attention to what you are putting in your belly. Good luck with your Ice Cream diet and let me know when you reach 200lbs! This works. Don't knock it till you try it.
