Thai Chicken with Spicy Peanut Sauce
Satay is one of my favorite appetizers — and so easy to make, too! The lean chicken provides energizing B-vitamins and protein, while the dipping sauce’s peanut butter adds even more protein without cholesterol. Serve leftovers over mixed greens for lunch or a light dinner.

With this, we no longer fear chicken. Maybe there is merit in the saying that the cooking makes the meal and not the ingredients. This recipe has reduced-sodium soy sauce – effort to encourage wholesomeness.

This is a great meal and my boys love anything with peanuts in it. Saved some time using Trader Joe's Peanut Satay sauce.

I made cream braised cabbage. But instead of using a lot of cream, I only used about 1-2 tablespoons, and added another tablespoon of horseradish. And that was for a whole head of cabbage. I got that creamy texture, and a great punch of flavor! And it goes great along side my mustard roasted potatoes!
