Thirty plus years ago, a friend of mine had a neighbor in a Kingsport, TN apartment complex who shared her recipe for pumpkin pie from scratch. And I can proudly say that there have been very few Thanksgivings or Christmases that this dessert has not graced my table. Here is:

Pearl's Pumpkin Pie

1 1/2 cups (cooked) mashed pumpkin.
1 c. milk
1 c. sugar
2 eggs well beaten
1 tsp. cinnamon
1/2 tsp. allspice (ground)
1/4 tsp. ginger
1/2 tsp. freshly grated nutmeg
1 tsp. vanilla
2 Tbsp. melted butter
Mix together all ingredients in a medium sauce pan and heat on medium until hot - DO NOT BOIL. Pour into prepared shell and bake at 350 degrees until set (a knife inserted between the center and the edge comes out clean) 40-50 minutes. (Test after 35 minutes to assure that you don't over bake).

I hope you enjoy this recipe and it becomes a family tradition at your house, too.

Hi Phyllis,
All is needed is a large pumpkin cut into halves and then bake at 350 until fork tender...as much as an hour or more. Then when cooled put pulp into blender and puree...fresh and delicious!

hi, i have two suggestions for using canned pumpkin.
1. i mix in either hot cocoa mix or chocolate chips and microwave for a low-cal dessert
2. i also mix some into my morning oatmeal
these might sound gross to some people- but don't knock it until you try it.
i have found that the trader joe's canned pumpkin is the best available.

Hi Phyllis - The Orange Pumpkin Soup calls for fresh pumpkin. We also gave instructions on how to make your own pumpkin puree, which I like to use in place of the canned pumpkin for any of the recipes.

I cannot believe you wrote this article all about actual pumpkins, and all your recipies call for pumpkin puree out of a can! Do you have a recipie for a pumpkin pie made directly from the pumpkin itself?
