Spotlight Recipe: EatingWell Gingerbread Cookies

I’ve made these cookies twice so far this season — bats for Halloween and now wintry snowflakes to kick off December. The dough is easy to work with, and the recipe makes so much that you can bake half now and save the remaining dough in the freezer for later. They’re not too gingery, so if you prefer your cookies with a bite up the spices. For chewier cookies, roll the dough thicker; for more of a gingersnap crunch, keep them thin.

Now that Thanksgiving is over, let the holiday baking season begin! This week, we’re offering up a cookie a day to give you ideas for holiday parties, cookie swaps or simple, healthier choices to satisfy your sweet tooth.

My mother-in-law discovered this recipe last year in a magazine, and these cookies became an instant family favorite. The combination of orange and chocolate makes for a light but decadent cookie. At 90 calories each, you can have one (or two) and not feel guilty about dessert.

You want crazy? Don't turn up your nose before trying this - baked potato w/ ketchup. It's like french fries, but without the fat! I never use butter or sour cream anymore. Bring on the ketchup!
