Love parsnips! Mostly I roast them. They deserve a bigger following. I always thought parsnips would be good in muffins, similar to carrots. Now I see AB has done this, and people liked them.

We just tried parsnips a couple days ago… I'm not really a fan, but I just boiled them and mixed with an herb butter. They're alright, just not my thing.
