Weekly Bits: Winter Wonderland

Winter’s official kick-off arrived, along with snow for a good portion of the country. This week’s comment wrap-up has tips for enjoying the cold-weather produce, including roasted chestnuts (no open fire required).

“You can also do a quick cook in the microwave. Cut an X on the flat side and heat 5-6 for 1 minute. But eat while still warm, or they get hard and tough when they cool off.” –Sandi

“Another excellent use is to make beet chili. Just shred the beets, add tomatoes, beans, water and proper chili spices, and voila! You have a great vegetarian healthy chili.” –Jane

“Ic have a recipe where I steam them in their jackets, peel and slice then saute in butter, fennel seeds, onions, garlic and the greens with a splash of merlot.” –Vivian
