Spotlight Recipe: Chocolate-Dipped Clementines

chocolatedippedclementines2_lead
We’ve got boxes of clementines around the house this time of year. Peeled and dipped in chocolate, this citrus fruit turns into a perfect dessert to serve with tea and espresso. A light sprinkle of coarse French sea salt heightens the flavor of the antioxidant-rich chocolate.

Chocolate-Dipped Clementines
Makes about 54 pieces

7-8 medium clementines
4-ounce dark chocolate bar (60-70% cocoa), finely chopped
Sea salt

Line a baking sheet with parchment paper. Peel and segment clementines, set aside. Gently melt chocolate in a small bowl in the microwave or over a double boiler. Working in small batches, dip segments in chocolate and transfer to parchment-lined sheet. Immediately sprinkle segments with a few grains of salt before the chocolate begins to set. Once all pieces have been dipped, set the sheet aside until chocolate hardens. To quickly harden chocolate, transfer baking sheet to the refrigerator for 10 minutes. Serve at room temperature.

Love this idea! I'm definitely going to try this. You get your chocolate fix without going overboard. Love it.

I like to dip strawberries and dried fruits in chocolate (craisins and prunes are the best!) but I've never tried citrus. Unfortunately, the clementines I just bought aren't seedless, so this wouldn't go down too well, but I may try it if I ever get my hands on the expensive kind.

Dear me. I think I am going to have to get that box of clemantines after all. I love the combination of chocolate and citrus but never thought of this. Dark Chocolate you say. I am definately going shopping in the morning. I can barely contain myself at the thought of eating this.

I like that the author noted the calories are too low in most of these bars. They should be combined to keep you satisfied longer. I also recommend bars that have some protein to help increase satiety.
