Make Your Own Applesauce

When I start seeing apple bushels at the market, I know it’s prime time for applesauce. Pass on the jarred stuff and whip up a batch of your own. It’s easy (we promise), and you won’t believe the delicious difference.

We’re kicking off Apple Week here at Healthy Eats, and I thought what better way than to share some fun facts and a few recipes (both savory and sweet) that star this simple fruit. Make it a day of apples.

Celery root might not look appealing, but don’t let that scare you away from giving it a chance. This veggie (a.k.a. celeriac) is a delicious early fall treat.

Carrots have a bad rep as “rabbit food,” but there’s nothing boring about them. With all their flavor and health benefits, they’re worth celebrating this time of year, and we’ve got recipes for the occasion — plus, the story behind baby carrots.

You might think grapes aren’t anything special to find at the farmers’ market, but locally grown grapes look different than anything I’ve seen at the grocery store. I picked some up this week to see what they were all about.

Potatoes already? Spuds may seem like a fall goodie, but young varieties have started showing up at markets now. This early maturing variety (named “Caribe”) is a real summer treat — their bright purple skin always makes me smile.

We take onions for granted because you can find them in the supermarket year round. Freshly picked, however, they’re quite a flavorful treat. From shallots to Vidalias, there’s a variety for just about every savory dish you want to cook up.

I love it when my 7-year old son asks for veggies. Green beans are one of the most popular requests. Maybe he only likes the crunchiness or bright color, but I’m content just knowing he wants some. For you other green bean lovers, here are some basics and fun ways to prepare this summer crop.

Also known as “cranberry” beans, these red and beige beauties are all over my market right now. They made an unusual but delicious addition to my summer succotash.

There aren’t many vegetables I don’t love, and it would be tough to narrow my favorites down to a top 10 list. If I had to, though, eggplants would definitely make the list. Friends often ask, “Are there ways to prepare them other than fried eggplant?” Yes, of course!
The woman shooting for 1,000 pounds is choosing an expensive form of suicide that we're probably paying the tab on. Really, it's not that different from a mom deciding to smoke four packs a day. We all know how it's going to end. But a smoker can still go to work, etc. I'd be interested to know if that woman is on disability due to her weight and where the money comes from for her massive binges. I hate the idea of taxpayers paying her to kill herself.
